LAMB DINNER


About 10 days ago, we stopped by our local butcher on Mesones.  We talked to Alejandro about getting some lamb.  He asked if he could take our phone number and call us when he knew he would have fresh lamb (before he froze it).  So we did.  We frequent this tienda a couple of times a week.  A few days later, we were in the tienda.  Alejandro told us that he would have fresh lamb on Saturday.  We asked if he would reserve a rack of lamb for us.  "Yes, of course", he said.  "Just come after 2:00 p.m."

Well, now we couldn't wait until Saturday afternoon.  Our mouths were already watering. 

On Saturday, we went to town and ran several errands.  About 1:45 p.m., we walked into the tienda and Alejandro asked  if we could come back in 30 minutes.  The lamb had not arrived.  He told us that the lamb was just slaughtered that morning on the family farm.  So, 30 minutes later we were back and the lamb was there.  As the butcher was still cleaning the lamb, we were talking to Alejandro about having the rack for dinner.  He highly suggested that we let the lamb rest for a minimum of 3 days.  We both looked at each other and were disappointed.  We really wanted to have the lamb that night.

Of course we took Alejandro's suggestion.  We let it rest and we had it on Tuesday night.  All we can say is that it was delicious.  Perhaps it would have been just as good on Saturday but we guess we'll never know.

BOB IS STILL LEARNING TO USE THE GRILL.
